A new convection oven was installed a few weeks ago in the cafeteria's kitchen. The oven, worth nearly $5,600, was purchased back in December. David Rhoden, food services director, says it was a better choice to purchase a new oven than to repair the old one.

"It would've been a vast amount of money on repairs to fix the old oven, so it was more economical to buy a new piece of equipment," Rhoden said.

The convection oven cooks foods at a lower temperature but at a faster rate, a benefit Rhoden says will help out in the kitchen for different meals.

Rhoden said the new oven also has better temperature controls than the old oven.

Rhoden says he hopes to buy another new piece of equipment for the kitchen, such as a steamer, at the same time next year. Rhoden says he eventually would like to refurnish the kitchen with more up-to-date, innovative equipment.

"Some of the equipment in the kitchen has been around for 15 to 20 years," Rhoden said. "Things need to change, it's the 21st century."
